Sweet potatoes

A classic staple at any holiday meal.
Ingredients
- 4 medium/large sweet potatoes
- 5 Tbsp. butter
- 2 Tbsp. brown sugar
- 2 tsp. white sugar
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 2 tsp. vanilla
Instructions
- Peel potatoes. Cut into 3/8″ rounds, then cut those in half.
- Add potatoes to a large pot, then stir in remaining ingredients. Cover and turn heat to low (2) for 10-15 minutes.
- Once sugar is melted and potatoes are starting to release their juices, turn heat up to medium (6) and bring to a simmer.
- Once simmering, reduce heat to medium-low (3). Stir every ~5 minutes until potatoes are fork tender and soft but not mushy and falling apart.
