Simple African tomato stew

A perfect stew for a variety of African dishes.

Ingredients

  • 2-3 Tbsp. oil
  • 1/2 onion
  • 2 cloves garlic
  • 1 can diced tomatoes or 3-4 medium tomatoes, diced
  • 1 Tbsp. tomato paste
  • 1/4” ginger or 1/8 tsp. ginger powder
  • 1 habanero
  • 1/8 tsp. baking soda
  • Salt and pepper, to taste

Instructions

  1. Dice onion, slice garlic, and grate ginger. Add enough oil to cover the bottom of the pot. Turn heat to medium (4-5).
  2. Once hot, sauté onion and garlic until starting to brown. 
  3. Add in can of tomato/diced tomatoes, tomato paste, ginger, habanero, and baking soda. Adjust salt and pepper, to taste. 
  4. Allow to simmer for 10-15 minutes.
