Pico de galo salsa

My go-to recipe for fresh, homemade pico de galo salsa.
Ingredients
- 4 off-the-vine or roma tomatoes
- 1/2 medium onion
- 1 clove of garlic or 1/4 tsp. garlic powder
- 1 medium jalapeño
- 7-10 springs of cilantro
- juice of 1 lime
- 1/2 tsp. salt, to taste
- 1/2 mango (optional)
Instructions
- Dice tomatoes, onion, and mango, if using. Finely mince the garlic.
- Cut off the green top and stem. Quarter the jalapeño lengthwise to remove the seeds and finely mince.
- Remove cilantro leaves from stalks. Rinse leaves well, pat dry, then finely chop.
- Mix everything in a bowl, adding lime juice and salt. Adjust to taste.
Notes
Add more or less lime juice, depending on how liquidy you want it.
