Instant pot spaghetti sauce

My favorite way to make spaghetti sauce.

Ingredients

  • 1 medium onion
  • 3 cloves of garlic
  • 1-2 chipotles in adobo sauce (optional)
  • 1 28oz. can crushed tomatoes
  • 1 1/2 cup beef or chicken broth
  • 2 Tbsp. dry red wine or 1 Tbsp. red wine vinegar
  • 1 Tbsp. oil
  • 2 tsp. honey
  • 2 tsp. oregano
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 bay leaves
  • 1 6 oz. can tomato paste

Instructions

  1. Add onion, garlic, and chipotle peppers to a food processor. Grind until finely chopped and liquidy.
  2. Set instant pot to sauté on high. Once preheated, add blended onion mixture. Sauté until liquid evaporates, ~5 minutes.
  3. Add in remaining ingredients besides tomato paste. Gently stir but do not fully incorporate.
  4. Dollop tomato paste on top and do not stir.
  5. Pressure cook on high for 25 minutes, then natural release for 15-20 minutes. Remove bay leaves.

Notes

Substitute 1/4 cup of broth with vodka for vodka sauce.

Once sauce is finished, turn sauté on low for 7-10 minutes to thicken, if desired.
