Instant pot spaghetti sauce

My favorite way to make spaghetti sauce.
Ingredients
- 1 medium onion
- 3 cloves of garlic
- 1-2 chipotles in adobo sauce (optional)
- 1 28oz. can crushed tomatoes
- 1 3/4 cup beef broth
- 2 Tbsp. dry red wine or 1 Tbsp. red wine vinegar
- 1 Tbsp. oil
- 2 tsp. honey
- 2 tsp. oregano
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 bay leaves
- 1 6 oz. can tomato paste
Instructions
- Add onion, garlic, and chipotle peppers to a food processor. Grind until finely chopped and liquidy.
- Set instant pot to sauté on high. Once preheated, add blended onion mixture. Sauté until liquid evaporates, ~5 minutes.
- Add in remaining ingredients besides tomato paste. Gently stir but do not fully incorporate.
- Dollop tomato paste on top and do not stir.
- Pressure cook on high for 25 minutes, then natural release for 15-20 minutes. Remove bay leaves.
Notes
Substitute 1/4 cup of broth with vodka for vodka sauce.
Once sauce is finished, turn sauté on low for 7-10 minutes to thicken, if desired.
