Peri peri sauce

A spicy African preparation of chicken that is unique and delicious.

Ingredients

  • 10-12 small hot chilis
  • 3 red jalapeños 
  • 4 habaneros
  • 3/4 red onion
  • 1/4 red bell pepper
  • 8 cloves garlic
  • 1/2” ginger
  • 4 Tbsp. apple cider vinegar, divided 
  • 2 Tbsp. lemon juice
  • 1 tsp. dried basil
  • 1/2 Tbsp. smoked paprika
  • 1/2 tsp. salt, to taste
  • 2-3 Tbsp. oil

Instructions

  1. Blacken all vegetables on a cast iron skillet over 5-6 heat, or broil on high until black spots appear. Allow to cool slightly.
  2. Blend blackened vegetables, 2 Tbsp. vinegar, lemon juice, and spices until smooth. Add just enough water to blend, if needed.
  3. Add blended ingredients to a saucepan. Add oil and remaining vinegar, adjust to taste, and cook down over medium-low (3) heat until thick, ~10 minutes. Use as marinade or dipping sauce.

Notes

The amount of chilis can be altered depending on desired level of hotness. This makes a relatively spicy sauce, although it could be spicier.
