African beef stew

A hearty tomato stew comfort food.
Ingredients
Beef
- 2 lbs. chuck stew beef
- 1/2 Tbsp. salt
- 2 c. water
- 2 c. oil, for frying (optional)
Stew
- 1 onion
- 1 1/2 cans (8 oz.) tomato paste
- 1 c. reserved beef stock
- 1/2 c. oil
Seasonings
- 1/2 tsp. curry powder
- 1/2 tsp. thyme
- 1 tsp. bullion powder
- 1/4 tsp. cayenne powder
- Salt, to taste
Instructions
- Rinse beef. If beef is not cut, cut into 1” cubes.
- In a pot, add water, beef, and salt. Bring to a boil, then allow to simmer for 30-40 minutes. Drain liquid, reserving juices.
- (Optional) Heat 2 c. of oil over medium (5) heat. Once hot, fry the beef in batches for ~5 minutes until brown, stirring often. Drain beef and set aside. Reserve 1/2 c. of the oil for the stew.
- Heat 1/2 c. of oil over medium (4) heat. Once hot, add onion. Cook until onion is soft.
- Once soft, add tomato paste mixed with 2 Tbsp. reserved beef stock to pot, along with seasonings. Fry until cooked and no longer bitter, ~5 minutes, stirring often.
- Add beef and enough beef stock to make a stew-like consistency. Allow to simmer, covered, for another ~5 minutes.
