A flavorful dish full of protein and vegetables.

Ingredients

  • 3 large bell peppers
  • 1 lb. ground beef
  • 1 cup cooked rice
  • 1 14 oz. can of black beans, drained
  • 1 Tbsp. Worcestershire sauce
  • 1 14 oz. can of tomato sauce, divided
  • 1/2 tsp. salt
  • 1/4 tsp. garlic powder

Instructions

Peppers

  1. Bring a large pot of water to a boil. Cut peppers in half lengthwise, then remove insides. 
  2. Boil pepper halves for 5-7 minutes, until easily pierced with a fork but still firm.
  3. Remove peppers from water, pouring out any excess water caught inside, and set aside.

Filling

  1. While peppers are boiling, brown ground beef. 
  2. Mix cooked ground beef with remaining ingredients, using only 1/4 cup of tomato sauce. 

Assembly

  1. Pour about half of the remaining tomato sauce, or ~1/4 cup, into the bottom of a 9”x13” dish. Place peppers open sides up on top.
  2. Generously fill each pepper until all filling has been used. Pour remaining tomato sauce evenly on top.
  3. Cover tightly with tin foil and bake at 375°F for 40 minutes.
