Stuffed bell peppers

A flavorful dish full of protein and vegetables.
Ingredients
- 3 large bell peppers
- 1 lb. ground beef
- 1 cup cooked rice
- 1 14 oz. can of black beans, drained
- 1 Tbsp. Worcestershire sauce
- 1 14 oz. can of tomato sauce, divided
- 1/2 tsp. salt
- 1/4 tsp. garlic powder
Instructions
Peppers
- Bring a large pot of water to a boil. Cut peppers in half lengthwise, then remove insides.
- Boil pepper halves for 5-7 minutes, until easily pierced with a fork but still firm.
- Remove peppers from water, pouring out any excess water caught inside, and set aside.
Filling
- While peppers are boiling, brown ground beef.
- Mix cooked ground beef with remaining ingredients, using only 1/4 cup of tomato sauce.
Assembly
- Pour about half of the remaining tomato sauce, or ~1/4 cup, into the bottom of a 9”x13” dish. Place peppers open sides up on top.
- Generously fill each pepper until all filling has been used. Pour remaining tomato sauce evenly on top.
- Cover tightly with tin foil and bake at 375°F for 40 minutes.
