Shredded barbecue chicken

A delicious way to make shredded chicken for a sandwich.

Ingredients

  • 2 lbs. boneless skinless chicken thighs
  • 1 cup barbeque sauce
  • 1 tsp. apple cider vinegar
  • 1-2 Tbsp. water, as needed

Instructions

  1. Heat cast iron to medium-high (6) heat. Lightly brown chicken on both sides, repeating in batches until all chicken is done. Set aside.
  2. Add browned chicken and remaining ingredients to a pot. Cover and simmer over medium-low (3) heat for 15-20 minutes, stirring a few times to avoid burning.
  3. Remove pot from heat and shred chicken using 2 forks.
  4. Return pot to heat and allow to simmer for 5-10 more minutes, uncovered, until barbeque sauce has thickened.
