Oloyin beans stew

A delightfully sweet and hearty dish.
Ingredients
Beans
- 2 cups Oloyin beans
- Water
- 1 tsp. salt
Stew
- 2 Tbsp. palm oil
- 1/4 onion
- 2 cloves of garlic
- 1/2 can diced tomatoes or 2 Tbsp. tomato paste
- 1 Tbsp. ground crayfish
- 1 tsp. chicken bullion
- Pinch of garlic powder, onion powder, basil, thyme
Instructions
Beans
- Sort through beans, then rinse and drain.
- Add Oloyin beans and salt to instant pot. Cover in 1” of water and pressure cook for 10 minutes. (Otherwise cook on stove for 40 minutes until soft but not mushy.)
- Set aside until stew is ready.
Stew
- Blend onion and tomato until smooth.
- Add palm oil to a pot over medium (4) heat. Fry blended tomato mixture for 5-10 minutes until no longer wet.
- Add in beans, crayfish, and seasonings. Cook over medium-low (3) for 10 minutes.
Notes
Serve with rice and ripe plantain.
