A flavorful, filling dish that is sure to please.
Ingredients
- 1 lb. ground beef
- 1/2 onion
- 1/2 red bell pepper
- 1 can fire roasted tomatoes
- 1 can black beans, drained
- 3/4 cup frozen corn
- 1 jalapeño
- 1 habanero (optional)
- 3/4 cup water
- 1 cup rice
Taco seasoning:
- 1 Tbsp. chili powder
- 1 tsp. cumin
- 1 tsp. smoked paprika
- 1 tsp. Mexican oregano
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/4 tsp. pepper
- 1/2 tsp. salt
Instructions
- Dice onion, bell pepper, and jalapeño. Drain and rinse black beans. Set aside.
- Add ground beef and onion to a skillet over medium (5) heat. Cook until ground beef is no longer pink. Drain if needed.
- Stir in tomatoes, beans, bell pepper, jalapeño, corn, habanero, water, and seasonings.
- Bring to a simmer. Stir in rice, reduce heat to medium-low (3) and cover. Allow to simmer for 30 minutes, stirring a few times. Once rice is cooked, remove cover and allow to sit for 5 minutes.
Notes
Use 1 1/4 cups of rice if making in the instant pot.
