Meatloaf

A classic, hearty meal that is sure to please.
Ingredients
Meatloaf
- 2 lbs. ground beef
- 1/2 onion
- 1/3 green bell pepper
- 3/4 slide of saltines (~20 crackers)
- 2 eggs
Seasonings (1 tsp. each)
- Nature’s season
- Garlic powder
- Black pepper
Tomato sauce
- 1 14 oz. can of tomato sauce
Instructions
- Finely dice onion and bell pepper. Crush crackers until 1/4” pieces or smaller. Set aside.
Mixer
- Add meatloaf ingredients and seasonings to the bowl of a stand mixer.
- Pulse on low until somewhat combined, then mix on low for one minute until ingredients fully incorporated.
By hand
- Add ground beef and seasonings to a large bowl. Mix with hands until thoroughly combined.
- Add onion and bell pepper and mix again.
- Add saltines and mix again.
- Add eggs and mix again.
Bake
- Press meatloaf into a 8” x 8” baking dish with 1” space on either side.
- Cover with tinfoil and bake at 375° for 45 minutes on middle rack.
- Cut meatloaf in half horizontally (the middle should be slightly pink). Pour tomato sauce evenly over the top.
- Put meatloaf back in the oven on the bottom rack uncovered for another 20 minutes.
- Once done, drain oil from bottom of the pan, if needed.
Notes
For a larger loaf, add another 1 lb. of ground beef and some additional seasonings. Press meat into a 9”x13” baking dish, leaving some room on the sides. Bake until no longer pink.
Tomato paste mixed with water can be substituted for tomato sauce.
