Sausage goulash

A warm and comforting meal that is perfect for winter.

Ingredients

  • 1 Tbsp. oil
  • 10 oz. andouille chicken sausage
  • 1 1/2 lbs. small red potatoes
  • 1 onion
  • 2 cloves of garlic
  • 2 tsp. smoked paprika
  • 1 tsp. paprika
  • 1/4 tsp. cumin
  • 1/4 tsp. pepper
  • 1/4 tsp. salt
  • 1 c. water or chicken stock
  • Parsley or cilantro, to garnish

Instructions

  1. Slice sausage into medallions on the diagonal. Wash and cut potatoes into 1/4” slices. Finely dice onion and mince garlic.
  2. Heat a cast iron skillet to medium-high (6-7). Fry sausage pieces until brown on both sides. Remove and set aside.
  3. In a pot, heat oil to medium (5). Add onion and sauté until golden brown and caramelized. Add garlic and stir until fragrant. Add spices and potatoes and stir for an additional 1-2 minutes.
  4. Add water or chicken stock. Bring to a boil, then allow to simmer over medium-low (4) until potatoes are tender, ~15 minutes. Stir often to ensure even cooking.
  5. Mash a few potatoes to create a thick consistency. Add sausage to pot and stir well. Continue cooking until heated through. To serve, sprinkle parsley or cilantro on top.

Notes

Goes great with dinner rolls.
