Sausage goulash

A warm and comforting meal that is perfect for winter.
Ingredients
- 1 Tbsp. oil
- 10 oz. andouille chicken sausage
- 1 1/2 lbs. small red potatoes
- 1 onion
- 2 cloves of garlic
- 2 tsp. smoked paprika
- 1 tsp. paprika
- 1/4 tsp. cumin
- 1/4 tsp. pepper
- 1/4 tsp. salt
- 1 c. water or chicken stock
- Parsley or cilantro, to garnish
Instructions
- Slice sausage into medallions on the diagonal. Wash and cut potatoes into 1/4” slices. Finely dice onion and mince garlic.
- Heat a cast iron skillet to medium-high (6-7). Fry sausage pieces until brown on both sides. Remove and set aside.
- In a pot, heat oil to medium (5). Add onion and sauté until golden brown and caramelized. Add garlic and stir until fragrant. Add spices and potatoes and stir for an additional 1-2 minutes.
- Add water or chicken stock. Bring to a boil, then allow to simmer over medium-low (4) until potatoes are tender, ~15 minutes. Stir often to ensure even cooking.
- Mash a few potatoes to create a thick consistency. Add sausage to pot and stir well. Continue cooking until heated through. To serve, sprinkle parsley or cilantro on top.

Goes great with dinner rolls.
