Fried chicken drumettes and sauce

A hearty African-inspired chicken stew.
Ingredients
- 2 lbs. chicken drumettes
- 1/4 cup avocado oil, for frying
- 1 medium onion
- 3 green onions
- 3 cloves of garlic
- 1 14 oz. can diced tomato
- 1 habanero
- 5 okra or 1 Tbsp. peanut butter
Seasoning
- 1/2 Tbsp. paprika
- 1 tsp. oregano
- 1/2 tsp. cumin
- 1/2 tsp. pepper
- Salt, to taste
Instructions
- Stir seasoning mixture in a bowl. Rub into chicken and let sit in a colander at room temperature for 10-30 minutes.
- Cover bottom of large pot with 1/4” oil, ~1/4 cup. Fry chicken in batches on medium-high (5-6) heat, covered with a splatter screen, until fully cooked and browned, ~3-4 minutes per side.
- Once all chicken has been fried, reduce heat to 5. Add onion, green onion, garlic, and sauté until starting to soften, ~3 minutes.
- Add entire can of tomato, along with a couple tablespoons of water. Bring to a boil, then add back chicken.
- If using okra, add them with tops cut off and habanero and cover without stirring (skip step 6).
- If using peanut butter instead of okra, wait until stew has boiled for about 10 minutes. Remove ~1/4 cup of liquid from the stew and whisk in peanut butter until completely smooth. Stir peanut butter mixture it to the pot.
- Continue to simmer for another 10-15 minutes.
