Chicken nuggets

This recipe is quick and easy to make and tastes way better than any store bought or fast food version.

Ingredients

  • 1 tsp. oil

Nuggets

  • 3 chicken thighs
  • 1/4 tsp. salt
  • 1/4 tsp. paprika
  • 1/4 tsp. basil
  • 1/8 tsp. garlic powder
  • 1/8 tsp. onion powder
  • 1/8 tsp. cilantro

Coating

  • 1/4 cup white whole wheat flour
  • 1/2 tsp. Nature’s season
  • 1/8 tsp. salt

Instructions

  1. Cut chicken thighs into large pieces. Add to a food processor, along with remaining nugget ingredients. Grind until chicken resembles a paste.
  2. Place ground chicken in fridge for at least 1 hour.
  3. Once ready to bake, preheat oven to 375°F. Mix coating ingredients in a bowl and set aside.
  4. Scoop chicken by the tablespoon and form into nuggets, each ~3/8” thick.
  5. Cover each nugget thoroughly in coating, shaking off the excess.
  6. Lightly grease a silicone baking mat on a baking sheet. Place nuggets evenly spread out, then lightly spray tops with oil.
  7. Bake on the bottom rack of the oven for 15 minutes, flipping halfway through.
