Blackened salmon

My favorite way to cook salmon.

Ingredients

  • 4 salmon fillets

Seasonings

  • 1 Tbsp. paprika
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1/2 tsp. oregano
  • 1/2 tsp. basil
  • 1/4 tsp. ancho chili powder
  • 1 tsp. salt

Instructions

  1. Preheat oven to 400°F. Combine seasonings in a small bowl and set aside.

Thawed filets

  1. Pat salmon fillets dry and rub seasonings on both sides.
  2. Heat a lightly greased cast iron skillet to medium-high (8). Once hot, add salmon fillets, skin-side down, and sear for 3 minutes.
  3. Flip fillets, then immediately put skillet in the oven. Bake for 10-14 minutes, depending on thickness.

From frozen

  1. Rinse filets and slice into serving size pieces, if needed. Pat dry.
  2. Cover all sides in oil, then sprinkle seasoning on top. 
  3. Heat cast iron to medium-high (6). Add filets to skillet skin side up. Cook for 4 minutes.
  4. Flip filets, then cover. Cook for another 7 minutes.
