A spicy, unique shredded beef.
Ingredients
- 2.5-3 lbs chuck roast
- 4 chipotle peppers in adobo (~1/2 a can)
- 1/2 onion
- 2 Tbsp. rice wine vinegar
- 2 Tbsp. lime juice
- 2 tsp. cumin
- 2 tsp. chili powder
- 2 tsp. oregano
- 1/8 tsp. ground cloves
- 5 cloves of garlic, smashed
- 3/4 cup broth (beef or chicken)
- 3 bay leaves
- Salt and pepper, to taste
Instructions
- Cut meat into 3-4” pieces. Cover with salt and pepper. Brown on medium-high (6) in a cast iron skillet until well charred.
- Add chipotle peppers, onion, and some broth to a food processor. Blend until smooth.
- Pour everything into a 9”x13” dish. Cover with tin foil and bake at 300°F for 3 hours.
