A spicy, unique shredded beef.

Ingredients

  • 2.5-3 lbs chuck roast
  • 4 chipotle peppers in adobo (~1/2 a can)
  • 1/2 onion
  • 2 Tbsp. rice wine vinegar
  • 2 Tbsp. lime juice
  • 2 tsp. cumin
  • 2 tsp. chili powder
  • 2 tsp. oregano
  • 1/8 tsp. ground cloves
  • 5 cloves of garlic, smashed
  • 3/4 cup broth (beef or chicken)
  • 3 bay leaves
  • Salt and pepper, to taste

Instructions

  1. Cut meat into 3-4” pieces. Cover with salt and pepper. Brown on medium-high (6) in a cast iron skillet until well charred. 
  2. Add chipotle peppers, onion, and some broth to a food processor. Blend until smooth. 
  3. Pour everything into a 9”x13” dish. Cover with tin foil and bake at 300°F for 3 hours.
