Variations

Banana: Reduce milk to 1/4 cup and add 1 mashed banana. Reduce sugar to 1/2 Tbsp.

Oatmeal: Reduce flour to 100g flour and add 1/3 cup (31g) quick oats. Optional: add oats to wet ingredients and allow to sit for 10 minutes to soften before adding remaining dry ingredients.

A classic recipe for fluffy sweet pancakes.

Ingredients

Wet ingredients

  • 3/4 cup (167.5g) milk
  • 1 Tbsp. sugar
  • 1 Tbsp. (9.5g) oil or yogurt
  • 1 egg
  • 1/2 tsp. vanilla extract

Dry ingredients

  • 1 cup (125g) all-purpose flour
  • Heaping 1 tsp. baking powder
  • 1/8 tsp. cinnamon
  • Pinch of salt

Instructions

  1. Preheat cast iron skillet over medium (5) heat for 5 minutes.
  2. While skillet is preheating, whisk wet ingredients until fully combined. Add dry ingredients on top, then whisk again until fully combined.
  3. Once skillet has preheated, turn heat down a half notch (4-5). Lightly grease skillet with 1-2 tsp. of oil.
  4. Pour 1/4 cup of batter onto the skillet. Allow to cook for ~1 1/2 to 2 minutes per side, or until bubbles start to show in the middle.
  5. Flip pancakes and cook for another minute, until center is fully cooked through and there is no wet batter.
  6. Repeat with remaining batter.

Notes

To keep pancakes warm before serving, place them in a 200° oven.
