A spongy, light and flavorful cake that is sure to please.

Ingredients

  • 3 eggs
  • 3 Tbsp. (40.8g) avocado oil
  • 1/2 cup (114g) yogurt
  • 1/4 cup + 1 1/2 Tbsp. (70g) sugar
  • 2 tsp. amaretto
  • 1 tsp. vanilla extract
  • 1 cup (125g) flour
  • 1 3/4 tsp. baking powder
  • 1/4 tsp. nutmeg
  • 1/4 tsp. salt

Instructions

  1. Whisk eggs and oil for one minute. Beat in yogurt until smooth.
  2. Beat in sugar and extracts until light, another minute. 
  3. Sift in remaining ingredients.
  4. Pour batter into a greased loaf pan. Bake at 350°F for 28 minutes.
