Sweet cherry pie

A delicious, summery pie.

Ingredients

  • 3 1/2 lb. sweet cherries
  • 3/4 cups sugar
  • Zest of 1/2 a lemon
  • 1 Tbsp. lemon juice
  • 1 Tbsp. tart cherry juice (optional)
  • 1/2 Tbsp. amaretto
  • 1/2 tsp. vanilla extract
  • 1/8 tsp. salt
  • 3 Tbsp. corn starch
  • 2 pie crusts
  • 1 egg
  • 1 Tbsp. milk

Instructions

  1. Wash, stem, halve, and pit cherries. Add remaining ingredients besides pie crusts and set aside.
  2. In the meantime, press pie crust into the bottom of 2 pie plates. Add half the filling to each pie crust, then top with second crust. Crimp edges with a fork, then freeze pies for 10-15 minutes. While freezing, preheat oven to 400°F.
  3. Once oven is preheated, brush top of pies with egg wash. Add slits for ventilation, then put pies on a baking sheet. Place in bottom third of the oven for 20 minutes, then lower the heat to 350°F for 40-50 minutes.
  4. Remove from oven and allow to cool for 3 hours or overnight.
