Sunshine muffins (Whole orange muffins)

A muffin that tastes like pure sunshine!
Ingredients
Wet ingredients
- 1/2 cup + 2 Tbsp. (150ml) milk
- 1/2 cup (40g) old fashioned oats
- 1/2 medium orange, washed, seeded, and chopped
- 1/2 (25g) egg
- 1/4 cup + 2 Tbsp. (75g) brown sugar
- 3 Tbsp. (41g) coconut oil, melted
- 1 tsp. amaretto
Dry ingredients
- 1 cup + 2 Tbsp. (140g) www flour
- 1 1/4 tsp. baking powder
- 1/8 tsp. baking soda
- 1/4 tsp. fine sea salt
Mix-ins
- 1/4 cup (48g) dried cranberries
- 2 Tbsp. chopped walnuts
Instructions
- Cover cranberries in water and melt coconut oil. Set aside.
- Measure oats into a bowl and pour the milk on top. Let stand for 5 minutes.
- Chop up the orange and put the pieces into a food processor. Pulse until very finely chopped, then add egg and pulse until smooth.
- Add orange purée to the oat mixture, along with the brown sugar, coconut oil, and amaretto. Stir until fully combined.
- Mix the flour, baking powder, and salt together in a large mixing bowl. Pout the wet ingredients on top then stir until just combined.
- Fold in cranberries and walnuts. Scoop 1/4 cup of batter into 9 silicone muffin liners.
- Bake at 425°F for 5 minutes, then reduce heat to 375°F. Bake for another 12-13 minutes until tops have some color and spring back when pressed.
