A muffin that tastes like pure sunshine!

Ingredients

Wet ingredients

  • 1/2 cup + 2 Tbsp. (150ml) milk
  • 1/2 cup (40g) old fashioned oats
  • 1/2 medium orange, washed, seeded, and chopped
  • 1/2 (25g) egg
  • 1/4 cup + 2 Tbsp. (75g) brown sugar
  • 3 Tbsp. (41g) coconut oil, melted
  • 1 tsp. amaretto

Dry ingredients

  • 1 cup + 2 Tbsp. (140g) www flour
  • 1 1/4 tsp. baking powder
  • 1/8 tsp. baking soda
  • 1/4 tsp. fine sea salt

Mix-ins

  • 1/4 cup (48g) dried cranberries
  • 2 Tbsp. chopped walnuts

Instructions

  1. Cover cranberries in water and melt coconut oil. Set aside.
  2. Measure oats into a bowl and pour the milk on top. Let stand for 5 minutes.
  3. Chop up the orange and put the pieces into a food processor. Pulse until very finely chopped, then add egg and pulse until smooth.
  4. Add orange purée to the oat mixture, along with the brown sugar, coconut oil, and amaretto. Stir until fully combined.
  5. Mix the flour, baking powder, and salt together in a large mixing bowl. Pout the wet ingredients on top then stir until just combined.
  6. Fold in cranberries and walnuts. Scoop 1/4 cup of batter into 9 silicone muffin liners.
  7. Bake at 425°F for 5 minutes, then reduce heat to 375°F. Bake for another 12-13 minutes until tops have some color and spring back when pressed.
