Snowball cookies

A tasty Christmas cookie.
Ingredients
- 1/4 cup (27g) pecans
- 1/4 cup (54.6g) coconut oil
- 1/2 tsp. amaretto
- 2 1/2 Tbsp. (19.6g) powdered sugar
- 3/4 cups (93.8g) all purpose flour
- 1/8 tsp. kosher salt
- Pinch of nutmeg
Rolling
- 1/4 cup powdered sugar
Instructions
- Grind pecans until very small. Set aside.
- Beat coconut oil, amaretto, and powdered sugar for one minute.
- Stir in flour, salt, nutmeg, and pecans until fully combined.
- Form dough into 8 balls, squeezing compactly.
- Bake at 350°F for 13 minutes until starting to turn brown.
- Allow cookies to cool for a few minutes, then roll in powdered sugar. Place on a wire rack.
- Once fully cooled, roll again in powdered sugar.
