A tasty Christmas cookie.

Ingredients

  • 1/4 cup (27g) pecans
  • 1/4 cup (54.6g) coconut oil
  • 1/2 tsp. amaretto
  • 2 1/2 Tbsp. (19.6g) powdered sugar
  • 3/4 cups (93.8g) all purpose flour
  • 1/8 tsp. kosher salt
  • Pinch of nutmeg

Rolling

  • 1/4 cup powdered sugar

Instructions

  1. Grind pecans until very small. Set aside.
  2. Beat coconut oil, amaretto, and powdered sugar for one minute.
  3. Stir in flour, salt, nutmeg, and pecans until fully combined.
  4. Form dough into 8 balls, squeezing compactly.
  5. Bake at 350°F for 13 minutes until starting to turn brown.
  6. Allow cookies to cool for a few minutes, then roll in powdered sugar. Place on a wire rack.
  7. Once fully cooled, roll again in powdered sugar.
