Pumpkin muffin tops

A delicious pumpkin dessert.

Ingredients

Wet ingredients

  • 1 large egg
  • 1/4 cup + 3 Tbsp. brown sugar
  • 1/4 cup avocado oil
  • 1/2 cup pumpkin puree
  • 1/2 tsp. vanilla extract

Dry ingredients

  • 1 cup (125g) all-purpose flour
  • 3/8 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 salt
  • 1/4 tsp. cinnamon
  • Scant 1/4 tsp. ginger
  • 1/8 tsp. nutmeg
  • Pinch of ground cloves

Instructions

  1. Beat egg and sugar until light and fluffy.
  2. Stir in oil, pumpkin, and vanilla. 
  3. Sift and fold in dry ingredients until just combined. 
  4. Allow batter to rest for 5 minutes. 
  5. Scoop 7 mounds onto a silicone lined baking sheet using a 1/4 measuring cup. 
  6. Bake at 325°F for 15 minutes. Let cool on baking sheet for 5 minutes, then move to wire rack. 
  7. Dust with powdered sugar just before serving, if desired.
