Pumpkin muffin tops

A delicious pumpkin dessert.
Ingredients
Wet ingredients
- 1 large egg
- 1/4 cup + 3 Tbsp. brown sugar
- 1/4 cup avocado oil
- 1/2 cup pumpkin puree
- 1/2 tsp. vanilla extract
Dry ingredients
- 1 cup (125g) all-purpose flour
- 3/8 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 salt
- 1/4 tsp. cinnamon
- Scant 1/4 tsp. ginger
- 1/8 tsp. nutmeg
- Pinch of ground cloves
Instructions
- Beat egg and sugar until light and fluffy.
- Stir in oil, pumpkin, and vanilla.
- Sift and fold in dry ingredients until just combined.
- Allow batter to rest for 5 minutes.
- Scoop 7 mounds onto a silicone lined baking sheet using a 1/4 measuring cup.
- Bake at 325°F for 15 minutes. Let cool on baking sheet for 5 minutes, then move to wire rack.
- Dust with powdered sugar just before serving, if desired.
