A great dairy-free pound cake.

Ingredients

  • 1/2 cup (110g) coconut oil
  • 3/4 cup (150g) sugar
  • 3 large eggs, room temperature
  • 1/2 tsp. vanilla
  • 1/2 tsp. amaretto
  • 1 3/4 cups (218.8g) all purpose flour
  • 1/4 tsp. baking powder
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. salt
  • 1/2 cup milk, room temperature

Instructions

  1. Stir dry ingredients together in a bowl and set aside.
  2. Using a stand mixer, beat coconut oil and sugar until light and fluffy, ~2 minutes.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla and amaretto.
  4. With mixer on low, add half the dry ingredients, then the milk, then remaining dry ingredients, mixing to incorporate at each stage.
  5. Pour batter into a greased 8”x4” loaf pan. Gently tap on the counter a few times to reduce large air bubbles. 
  6. Place pan in a cold oven, then turn on to 325°F. Bake for 50 minutes.
  7. Allow to cool in pan for 5-10 minutes, then remove from pan and move to a wire rack to finish cooling.
