Pound cake

A great dairy-free pound cake.
Ingredients
- 1/2 cup (110g) coconut oil
- 3/4 cup (150g) sugar
- 3 large eggs, room temperature
- 1/2 tsp. vanilla
- 1/2 tsp. amaretto
- 1 3/4 cups (218.8g) all purpose flour
- 1/4 tsp. baking powder
- 1/4 tsp. ground nutmeg
- 1/4 tsp. salt
- 1/2 cup milk, room temperature
Instructions
- Stir dry ingredients together in a bowl and set aside.
- Using a stand mixer, beat coconut oil and sugar until light and fluffy, ~2 minutes.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla and amaretto.
- With mixer on low, add half the dry ingredients, then the milk, then remaining dry ingredients, mixing to incorporate at each stage.
- Pour batter into a greased 8”x4” loaf pan. Gently tap on the counter a few times to reduce large air bubbles.
- Place pan in a cold oven, then turn on to 325°F. Bake for 50 minutes.
- Allow to cool in pan for 5-10 minutes, then remove from pan and move to a wire rack to finish cooling.
