Below are two butter-free version of pie crusts. They both work well they are just made with slightly different ingredients.
Hand pies
Hand pies are cute mini versions of whole pies. They are great for taking on the go or freezing for later.
- Cut out 12 circles of pie crust, rerolling the scraps, as needed.
- Lay out half of the circles on a baking sheet and top them with 1 Tbsp. filling. Top with other circles of dough and crimp edges with fork.
- Brush with egg wash, cut a small x on top, then sprinkle with sugar.
- Bake at 375°F for 16-17 minutes until tops are golden.

A butter-free pie crust that is perfectly flaky.
Ingredients
- 1 cup + 2 Tbsp. (140.5g) flour
- 1 Tbsp. sugar (for sweet crusts)
- 1/8 tsp. salt
- 1/3 cup (53ml) avocado oil
- 2-3 Tbsp. water
Instructions
- Whisk together flour, sugar, and salt in a large mixing bowl. Make a well in the center and add in oil and 1-2 Tbsp. of water.
- Mix with fork until fully combined.
- Add in enough water to form a smooth dough that doesn’t crumble when pressed.
- Optional: cover and allow to rest in the fridge for 10+ minutes.
- Press dough into the bottom and up the sides of a 9” pie plate. Dock bottom with a fork.
- Parbake at 350°F for 10 minutes.
Notes
Filling can be added directly to hot crust after par-baking. Bake pie as directed.
Gingerbread pie crust

A flavorful pie crust perfect for the holidays.
Ingredients
- 1 cup + 2 Tbsp. (140.5g) flour
- 2 Tbsp. brown sugar
- Heaping 1/4 tsp. cinnamon
- Heaping 1/4 tsp. ginger
- 1/8 tsp. salt
- Pinch of cloves
- 1/4 cup oil
- 1 Tbsp. blackstrap molasses
- 1 Tbsp. milk
Instructions
- Whisk together flour, sugar, spices, and salt in a large mixing bowl.
- Make a well in the center and add in oil and molasses. Mix with fork until fully combined.
- Add in milk to form a smooth dough that doesn’t crumble when pressed.
- Optional: cover and allow to rest in the fridge for 10+ minutes.
- Press dough into the bottom and up the sides of a 9” pie plate. Dock bottom with a fork.
- Parbake at 350°F for 10 minutes.

Ingredients
- 1 cup (125g) flour
- 1 Tbsp. sugar
- 1/8 tsp. salt
- 1/8 tsp. baking powder
- 2 Tbsp. oil
- 1/4 cup (80g) yogurt
Instructions
- Mix flour, sugar, baking powder, and salt in a large bowl.
- Add oil and yogurt, and mix by hand until dough is cohesive.
- Roll out or cover with plastic wrap and place in the fridge until ready to use.
