Ingredients
- 1 Tbsp. white sugar, for rolling
Wet ingredients
- 1 Tbsp. (13.7g) coconut oil
- 1 Tbsp. + 1 tsp. (23.7g) peanut butter
- 1 Tbsp. + 1 tsp. (16.7g) white sugar
- 1 Tbsp. + 1 tsp. (16.7g) brown sugar
- 1/4 (12.5g) egg
- 1/4 tsp. vanilla
Dry ingredients
- 1/4 cup (31.7g) all-purpose flour
- 1/8 tsp. baking soda
- Pinch of salt
Instructions
- Beat coconut oil, peanut butter, and sugars until light and fluffy. Stir in egg and vanilla.
- Fold in dry ingredients until just combined.
- Roll dough into 4 balls then chill for 10-15 minutes.
- Roll balls in sugar, then spread out on a baking sheet. Press tops with a fork to create a hash mark.
- Bake at 375°F for 8-9 minutes.
