Mashed potato rolls

A great way to use up leftover mashed potatoes.
Ingredients
- 1/4 cup milk
- 2 Tbsp. water
- 2 1/4 cups (280g) all-purpose flour
- 1 tsp. yeast
- 2 1/2 Tbsp. brown sugar
- 3/4 tsp. salt
- 1/2 cup mashed potatoes
- 1 egg
- 2 Tbsp. oil
Instructions
- Heat milk and water until warm to the touch.
- Add flour, yeast, sugar, and salt to the bowl of a stand mixer. Stir on low until thoroughly combined.
- Add milk mixture to bowl, along with mashed potatoes, egg, and oil. Mix on low until a soft dough forms.
- Mix on low for 4 minutes. (The dough will be tacky). Grease dough, then cover and allow to double in size.
- Once dough has doubled in size, turn out onto a floured countertop. Cut into 9 equal pieces.
- Fold bottoms underneath each piece to form a ball, then place in a lightly greased 8” square baking dish.
- Cover and allow to rise again until large and fluffy. Bake at 350°F for 18-22 minutes. Remove from oven and allow to cool for at least 10 minutes before pulling apart.
