Irish Barmbrack Tea Bread

This old-timey bread is perfect for cold weather and keeps you reaching for more.
Ingredients
Wet ingredients
- 1 cup strongly brewed tea
- 1 Tbsp. whiskey
- 1/2 Tbsp. Triple sec
- 1/2 Tbsp. amaretto
- 1 egg
Dry ingredients
- 1 cup (125g) all-purpose flour
- 3/4 cup (93.8g) www flour
- 1/4 cup (31.2g) whole wheat flour
- 1/4 cup (50g) brown sugar
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/4 tsp. ground ginger
- 1/4 tsp. all spice
- 1/8 tsp. cloves
Dry fruit
- 3/4 cup mixed dry fruit (see note)
- 1/2 cup raisins
Instructions
- Cut dried fruit into small pieces, as needed. Set aside.
- Brew tea. While still hot, stir in whiskey, Triple sec, amaretto, and dried fruit. Allow to soak for at least 1 hour.
- Once ready to make loaf, preheat oven to 325°F. Whisk dry ingredients together in a bowl.
- Stir in soaked dry fruit and any liquid until mostly combined.
- Whisk egg in a separate bowl, then fold into batter.
- Pour batter into a 8”x4” loaf pan. Allow to rest for 5-10 minutes.
- Bake for 50 minutes or until center is set.
Notes
Some dried fruits that work well include figs, cranberries, blueberries, and golden raisins.
To brew tea, use 2 tea bags and 1 1/2 cups of boiling water. Allow to steep for 5-7 minutes.
