A customizable version of a delicious storebought treat.

Ingredients

Dry ingredients

  • 1 cup (125g) www flour
  • 3/4 cup (92g) whole wheat flour
  • 1/3 cup + 1 Tbsp. (79g) brown sugar
  • 3/4 tsp. baking powder
  • 1/4 tsp. kosher salt
  • 1/4 tsp. nutmeg

Wet ingredients

  • 1/4 cup (54.6g) coconut oil
  • 1 Tbsp. orange juice (or milk)
  • 2 large eggs
  • 1 tsp. vanilla extract

Instructions

Filling 

  1. Add filling ingredients to a pot. Boil until soft, ~ 5 minutes, then set aside to cool.
  2. Purée in a food processor until smooth.

Dough

  1. Combine dry ingredients in a bowl, then cut in coconut oil. 
  2. Stir in egg, orange juice, and vanilla.
  3. Press dough together until cohesive, wrap in plastic, and allow to rest for at least 15 minutes. If longer, refrigerate until use.
  4. Assembly

  1. Cut dough into 3 pieces. Roll each piece on a silicone mat into a 10“x 4” rectangle, ~1/4” thick.
  2. Spread filling in a 1” strip up the middle, then fold dough over filling and pinch shut.
  3. Flip seam side down, then gently roll top and press into desired shape. Score logs into 6 pieces each, ~2” long.
  4. Bake at 325°F for 20 minutes. Allow to cool for 5 minutes, then cut into pieces. Move to a wire rack to finish cooling.

Notes

Store in an airtight container.

These get better after a day since they soften in the container.
