A customizable version of a delicious storebought treat.
Ingredients
Dry ingredients
- 1 cup (125g) www flour
- 3/4 cup (92g) whole wheat flour
- 1/3 cup + 1 Tbsp. (79g) brown sugar
- 3/4 tsp. baking powder
- 1/4 tsp. kosher salt
- 1/4 tsp. nutmeg
Wet ingredients
- 1/4 cup (54.6g) coconut oil
- 1 Tbsp. orange juice (or milk)
- 2 large eggs
- 1 tsp. vanilla extract
Instructions
Filling
- Add filling ingredients to a pot. Boil until soft, ~ 5 minutes, then set aside to cool.
- Purée in a food processor until smooth.
Dough
- Combine dry ingredients in a bowl, then cut in coconut oil.
- Stir in egg, orange juice, and vanilla.
- Press dough together until cohesive, wrap in plastic, and allow to rest for at least 15 minutes. If longer, refrigerate until use.
Assembly
- Cut dough into 3 pieces. Roll each piece on a silicone mat into a 10“x 4” rectangle, ~1/4” thick.
- Spread filling in a 1” strip up the middle, then fold dough over filling and pinch shut.
- Flip seam side down, then gently roll top and press into desired shape. Score logs into 6 pieces each, ~2” long.
- Bake at 325°F for 20 minutes. Allow to cool for 5 minutes, then cut into pieces. Move to a wire rack to finish cooling.
Notes
Store in an airtight container.
These get better after a day since they soften in the container.
