Variations
Fruit: many fruits can be used here, such as blueberries, cherries, plums, peaches, and apples. Berries can be used whole, and other fruits like plums can be cut into 1/2” pieces.
Spices: spices can be adjusted based on what fruit is used. The ones given in the recipe will go with pretty much any type of fruit.
Scaled up
To scale this up, double recipe and make in 9” pie plate. Bake for 33 minutes.

An easy way to make a dessert that is just as delicious as pie.
Ingredients
- 1 cup fresh fruit
- 1/2 Tbsp. sugar
Dry ingredients
- 1/2 cup (62.5g) flour
- 1/4 cup + 2 Tbsp. (75g) sugar
- 1/4 tsp. cinnamon
- 1/8 tsp. nutmeg
- Pinch of ground cloves
- 1/4 tsp. salt
Wet ingredients
- 3 Tbsp. (41g) coconut oil, melted
- 1 large egg, room temperature
- 1 tsp. milk
- 3/4 tsp. amaretto
Instructions
- Mix dry ingredients together. Set aside.
- Whisk wet ingredients until fully combined.
- Pour wet ingredients into dry and mix until just combined. Fold in fruit.
- Turn batter out into a 8”x 4” loaf pan and gently smooth top. Sprinkle 1/2 tablespoon of sugar evenly over the top.
- Bake at 350°F for 28 minutes, until lightly golden brown. Allow to fully cool in pan before serving.
