Coconut oil biscuits

A classic, flaky biscuit made without butter.

Ingredients

  • 3 Tbsp. coconut oil
  • 1/2 cup + 1 Tbsp. milk
  • 1 tsp. apple cider vinegar
  • 1 Tbsp. beaten egg (optional)
  • 1 1/2 cup (187.5g) flour
  • 2 tsp. sugar
  • 1 3/4 tsp. baking powder
  • 3/4 tsp. salt

Instructions

  1. Measure coconut oil and place in freezer until needed.
  2. Combine milk and apple cider vinegar. Set aside.
  3. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  4. Cut in coconut oil with a fork until crumbly. Pour in milk (and egg, if using) and mix.
  5. Knead until combined, then move dough to a clean counter top. Adding flour as needed, pat into a 1” thick rectangle. Cut into 8 biscuits.
  6. Place biscuits spread out on a baking sheet. Bake at 425°F for 10 minutes.
