Coconut oil biscuits

A classic, flaky biscuit made without butter.
Ingredients
- 3 Tbsp. coconut oil
- 1/2 cup + 1 Tbsp. milk
- 1 tsp. apple cider vinegar
- 1 Tbsp. beaten egg (optional)
- 1 1/2 cup (187.5g) flour
- 2 tsp. sugar
- 1 3/4 tsp. baking powder
- 3/4 tsp. salt
Instructions
- Measure coconut oil and place in freezer until needed.
- Combine milk and apple cider vinegar. Set aside.
- In a mixing bowl, combine flour, sugar, baking powder, and salt.
- Cut in coconut oil with a fork until crumbly. Pour in milk (and egg, if using) and mix.
- Knead until combined, then move dough to a clean counter top. Adding flour as needed, pat into a 1” thick rectangle. Cut into 8 biscuits.
- Place biscuits spread out on a baking sheet. Bake at 425°F for 10 minutes.
