Boiled frosting

A marshmallowy frosting.

Ingredients

  • 1 cup (200g) granulated sugar
  • 1/2 cup (100ml) water
  • 2 (65g) egg whites
  • 1/16 tsp. cream of tartar
  • 1/2 tsp vanilla extract

Instructions

  1. To a medium pot, add sugar and water. Over medium (5) heat, stir until sugar has dissolved.
  2. Once dissolved, allow to boil without stirring until syrup reaches 244°F or for ~7 minutes. Brush sides of pot with water to eliminate crystals and turn heat down to medium-low (3), as needed.
  3. Once temperature has been reached, remove from heat and set aside. 
  4. Add egg whites and cream of tartar to bowl of a stand mixer. Beat with whisk attachment until stiff peaks.
  5. Slowly add sugar syrup to egg whites while mixer runs on medium-low speed. Do not scrape bottom of pot.
  6. Once fully combined, mix in vanilla. Beat frosting on medium speed for 1-2 minutes until thick and glossy.
