Chocolate version
Replace flour with:
- 1/2 cup all-purpose flour
- 1/3 cup www flour
- 1/4 cup cocoa powder
Add 1/2 cup chocolate chips (optional).
Mandel bread
For a softer bread:
- 60g all purpose flour
- 55g www flour
- 1 Tbsp. yogurt
- 1/2 Tbsp. oil
Bake and cut same as biscotti.

A fun, crunchy cookie that goes great with a cup of coffee.
Ingredients
- 1/4 cup (50g) sugar
- 1 egg
- 3/4 tsp. amaretto
- 3/4 tsp. vanilla extract
- 1/4 cup + 2 3/4 Tbsp. (53g) all-purpose flour
- 1/4 cup + 3 Tbsp. (50g) www flour
- 1/2 tsp. cinnamon
- 1/2 tsp. baking powder
- 1/8 tsp. salt
- 1/3 cup mix-ins
Instructions
- Beat egg, sugar, and extracts until mostly smooth. Add remaining ingredients, then mix until fully combined and no dry spots remain. Stir in mix-ins.
- Lightly flour hands to shape dough into a log that is 8″ long x 3″ wide.
- Bake at 350°F for 18-20 minutes or until top is firm but has a little give. (The top will be pretty pale).
- Remove from oven and allow to cool for 20-30 minutes on a wire rack.
- With a serrated knife, cut log into slices that are ~1/2 wide. Place cut side up on baking sheet and bake again at 350°F for 15 minutes or until dry, flipping halfway through.
- Remove from oven and allow to cool before storing.
