Chocolate version

Replace flour with:

  • 1/2 cup all-purpose flour
  • 1/3 cup www flour
  • 1/4 cup cocoa powder

Add 1/2 cup chocolate chips (optional).

Mandel bread

For a softer bread:

  • 60g all purpose flour
  • 55g www flour
  • 1 Tbsp. yogurt
  • 1/2 Tbsp. oil

Bake and cut same as biscotti.

Additional Time: 20 minutes
Total Time: 1 hour 1 minute

A fun, crunchy cookie that goes great with a cup of coffee.

Ingredients

  • 1/4 cup (50g) sugar
  • 1 egg
  • 3/4 tsp. amaretto
  • 3/4 tsp. vanilla extract
  • 1/4 cup + 2 3/4 Tbsp. (53g) all-purpose flour
  • 1/4 cup + 3 Tbsp. (50g) www flour
  • 1/2 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 1/8 tsp. salt
  • 1/3 cup mix-ins

Instructions

  1. Beat egg, sugar, and extracts until mostly smooth. Add remaining ingredients, then mix until fully combined and no dry spots remain. Stir in mix-ins.
  2. Lightly flour hands to shape dough into a log that is 8″ long x 3″ wide.
  3. Bake at 350°F for 18-20 minutes or until top is firm but has a little give. (The top will be pretty pale).
  4. Remove from oven and allow to cool for 20-30 minutes on a wire rack.
  5. With a serrated knife, cut log into slices that are ~1/2 wide. Place cut side up on baking sheet and bake again at 350°F for 15 minutes or until dry, flipping halfway through.
  6. Remove from oven and allow to cool before storing.
