Banana puff puff

A popular West African street food.

Ingredients

  • 1/2 cup (120ml) warm water

  • 1 tsp. active dry yeast
  • 2 Tbsp. (50g) sugar
  • 1 ripe banana
  • 1 1/3 cups (170g) flour
  • 3/8 tsp. salt
  • 1 tsp. nutmeg
  • 2 cups peanut oil, for frying

Instructions

  1. In a bowl, combine water, yeast, and sugar. Set aside to proof for 5 minutes. In a large mixing bowl, mash banana.
  2. Add yeast mixture to mashed banana and mix well. Stir in flour, salt, and nutmeg. 
  3. Cover and set aside. Allow to rise for 1 hour or until about doubled in size. Refrigerate if making later. (If dough has been refrigerated, let sit at room temperature for 30 minutes before frying).
  4. Add oil to a medium heavy bottom pot. Heat over medium-high (7) until hot. (Oil is hot when batter is dropped in and doesn’t sink). 
  5. Stir batter to deflate the bubbles.
  6. Drop batter by the tablespoon into the oil. In batches, fry on both sides until golden brown, ~2 minutes per side.
