Banana cake

A light and tasty cake that is full of flavor.

Ingredients

Wet ingredients

  • 2 medium (3/4 cup, ~200g) bananas
  • 1/2 cup (114g) yogurt
  • 1/2 cup (97.4g) brown sugar
  • 3 Tbsp. (40.8g) oil
  • 1 egg
  • 2 tsp. amaretto
  • 1/4 tsp. bourbon
  • 1 tsp. apple cider vinegar

Dry ingredients

  • 1 cup (125g) all-purpose flour
  • 3/4 tsp. baking soda
  • 1/4 tsp. salt

Mix-ins

  • 1/4 cup finely chopped walnuts

Instructions

  1. Mash bananas until mostly smooth. Add remaining wet ingredients and whisk for 1-2 minutes.
  2. Sift in dry ingredients, then mix until mostly combined. 
  3. Fold in chopped nuts and incorporate any remaining flour.
  4. Pour batter into a greased 8”x8” baking dish. Bake at 350°F for 25 minutes, until middle is set and top is golden.
