A baked version of a classic West African snack.
Ingredients
- 1 Tbsp. oil
Dry ingredients
- 2 cups (150g) all-purpose flour
- 1/4 cup (50g) sugar
- Heaping 1/4 tsp. baking powder
- 1/2 tsp. nutmeg
- 1/4 tsp. salt
Wet ingredients
- 2 Tbsp. coconut oil
- 1/4 cup milk
- 1 large egg
- 1/2 tsp. vanilla
Instructions
- Combine dry ingredients in a bowl.
- Whisk wet ingredients together then pour into dry.
- Stir until mostly incorporated, then use your hands to form into a ball.
- Roll dough until between 1/4”-1/2” thick. Use a pizza cutter to slice into strips 1/2” squares.
- Grease a silicone baking mat with a generous amount of oil. Scatter chin chin pieces on pan and give a good stir.
- Bake at 350°F on lowest rack of oven for 25 minutes until starting to turn golden. Stir every 7-10 minutes.
- Lower temperature to 300°F. Bake for another 15 minutes, flipping halfway.
- Allow to cool before serving.
