Apple cider donut loaf cake

A charming quick bread that tastes like apples and fall.
Ingredients
Wet ingredients
- 1 1/2 cups apple cider
- 1/2 cup + 1 Tbsp. (112.5g) brown sugar
- 1/3 cup (56g) oil
- 1 egg
- 2 Tbsp. (28g) maple syrup
- 1 Tbsp. milk
- 1/2 tsp. vanilla
Dry ingredients
- 2 cups (250g) all-purpose flour
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/8 tsp. allspice
- 1/8 tsp. ginger
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
Cinnamon sugar topping
- 2 tsp. sugar
- 1/4 tsp. cinnamon
- 1/16 tsp. allspice
Instructions
- Boil apple cider over medium (5) heat until reduced to 3/4 cup. Set aside to cool.
- In a bowl, beat oil and brown sugar until light.
- Beat in egg, then stir in maple syrup, milk, and vanilla until smooth.
- Fold in dry ingredients until fully combined. Pour batter into a 8”x4” loaf pan.
- Bake at 350°F for 45 minutes. Remove from oven and allow to cool in the pan for 10 minutes, then loosen loaf from pan.
- Brush top of loaf with apple cider, then sprinkle liberally with cinnamon sugar topping, allowing any excess to run down the sides of the loaf. Allow to cool.
