A charming quick bread that tastes like apples and fall.

Ingredients

Wet ingredients

  • 1 1/2 cups apple cider
  • 1/2 cup + 1 Tbsp. (112.5g) brown sugar
  • 1/3 cup (56g) oil
  • 1 egg
  • 2 Tbsp. (28g) maple syrup
  • 1 Tbsp. milk
  • 1/2 tsp. vanilla

Dry ingredients

  • 2 cups (250g) all-purpose flour
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/8 tsp. allspice
  • 1/8 tsp. ginger
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt

Cinnamon sugar topping

  • 2 tsp. sugar
  • 1/4 tsp. cinnamon
  • 1/16 tsp. allspice

Instructions

  1. Boil apple cider over medium (5) heat until reduced to 3/4 cup. Set aside to cool.
  2. In a bowl, beat oil and brown sugar until light.
  3. Beat in egg, then stir in maple syrup, milk, and vanilla until smooth.
  4. Fold in dry ingredients until fully combined. Pour batter into a 8”x4” loaf pan.
  5. Bake at 350°F for 45 minutes. Remove from oven and allow to cool in the pan for 10 minutes, then loosen loaf from pan.
  6. Brush top of loaf with apple cider, then sprinkle liberally with cinnamon sugar topping, allowing any excess to run down the sides of the loaf. Allow to cool.
