A creamy, eggy pudding that is perfectly sweet.

Ingredients

  • 1/2 cup small tapioca pearls
  • 1 cup warm water
  • 2 1/4 cups milk
  • 1/4 tsp. salt
  • 1/2 cup granulated sugar
  • 1 tsp. vanilla extract
  • 2 large eggs

Instructions

  1. Place tapioca pearls and warm water in a pot. Set aside to soak for 15-30 minutes.
  2. Turn the heat to medium-high (6), then add in salt and 1 cup of milk. Bring to a simmer.
  3. Allow to simmer for ~5 minutes until thick, stirring often.
  4. Reduce heat to low (2) and stir in sugar and vanilla.
  5. In a separate bowl, beat egg. Slowly add 1/2 cup of hot mixture to the egg, whisking constantly until smooth. Pour egg mixture into pot and whisk until smooth.
  6. Slowly add in remaining 1 1/4 cup of milk, stirring continuously.
  7. Continue to cook, stirring often and covering as needed, until almost all tapioca pearls are translucent, ~10 more minutes.
  8. Allow to cool for 5-10 minutes, then pour pudding into serving dishes.
