Apple walnut
Wet ingredients
1 medium apple, grated
1/4 cup applesauce
1 egg
1 tsp. lemon juice
3 Tbsp. sugar
2 Tbsp. coconut oil
1 tsp. coconut milk powder
2 tsp. amaretto
1 tsp. vanilla
1 Tbsp. milk (if needed)
Dry ingredients
1 cup (130g) www flour
1 cup (120g) all purpose flour
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. nutmeg
1/4 tsp. salt
Mix-ins
1/2 cup walnuts
Method
1. Grate apple. Make coconut brown butter. Toast and chop walnuts. Set aside.
2. Whisk wet ingredients (besides milk) together in a large mixing bowl. Stir dry ingredients together separately.
3. Stir dry ingredients into wet until no loose flour at the bottom of the bowl. (Add milk, if needed). Pour out onto a lightly floured surface and shape into a 6” circle.
4. Cut into six equal triangles. Place on a baking sheet, brush tops with milk and sprinkle with sugar. Bake at 400°F for 18 minutes or until tops are lightly golden.
Scones
A dairy-free version of a classic breakfast treat.
Ingredients
Wet ingredients
- 3 Tbsp. (41g) coconut oil, slightly chilled
- 3 Tbsp. (45.9g) milk, cold
- 1 egg, cold
- 3 Tbsp. (37.7g) sugar
- 1 tsp. amaretto
- 1 tsp. vanilla
Dry ingredients
- 2 cups (250g) www flour
- 2 1/4 tsp. (10g) baking powder
- 1/4 tsp. salt
Spices
- 1/4 tsp. cinnamon
- 1/4 tsp. ginger
- 1/8 tsp. nutmeg
Add-ins
- 1/2 cup chopped fruit
- 1/2 cup ground or chopped nuts
Instructions
- If needed, chop fruit and nuts and set aside. If fruit was frozen, put chopped pieces back into the freezer during assembly.
- Whisk dry ingredients together. Cut in coconut oil until pea-sized or smaller.
- In another bowl, beat wet ingredients together until smooth. Pour into dry ingredients and stir until mostly combined.
- Add chopped fruit and stir until fully incorporated.
- Dump dough onto a lightly floured surface. Form into a 6” circle that is ~1” tall.
- Cut circle into 6 wedges and place on a baking sheet. Brush with milk and sprinkle with sugar.
- Bake at 400°F for 15-17 minutes until tops are golden.
