A baked version of a classic West African snack.

Ingredients

  • 1 Tbsp. oil

Dry ingredients

  • 2 cups (150g) all-purpose flour
  • 1/4 cup (50g) sugar
  • Heaping 1/4 tsp. baking powder
  • 1/2 tsp. nutmeg
  • 1/4 tsp. salt

Wet ingredients

  • 2 Tbsp. coconut oil
  • 1/4 cup milk
  • 1 large egg
  • 1/2 tsp. vanilla

Instructions

  1. Combine dry ingredients in a bowl. 
  2. Whisk wet ingredients together then pour into dry. 
  3. Stir until mostly incorporated, then use your hands to form into a ball.
  4. Roll dough until between 1/4”-1/2” thick. Use a pizza cutter to slice into strips 1/2” squares.
  5. Grease a silicone baking mat with a generous amount of oil. Scatter chin chin pieces on pan and give a good stir.
  6. Bake at 350°F on lowest rack of oven for 25 minutes until starting to turn golden. Stir every 7-10 minutes.
  7. Lower temperature to 300°F. Bake for another 15 minutes, flipping halfway.
  8. Allow to cool before serving.
