A cute and delicious cookie cup perfect with or without filling.
Ingredients
- 1 Tbsp. + 2 tsp. (25g) coconut oil
- 1 tsp. (3g) coconut milk powder
- 1/4 cup (25g) brown sugar, packed
- 1 Tbsp. + 1/2 tsp. (15g) granulated sugar
- 1 Tbsp. (12.5g) large egg
- 1/4 tsp vanilla extract
- 3/8 cup (46.8g) all-purpose flour
- 1/8 tsp baking soda
- 1/8 tsp baking powder
- Pinch of salt
- 3 Tbsp. chocolate chips, chopped in half
Instructions
- Brown coconut milk powder in coconut oil.
- Mix coconut oil with sugars. Whisk in eggs and vanilla for 30-40 seconds.
- Fold in the dry ingredients, then fold in chocolate chips.
- Press 2 teaspoons into the bottoms and up the sides of 9 mini muffin tins.
- Bake at 350°F for 8 minutes. Remove from oven and press centers with the back of a teaspoon.
- Allow to cool in pan for 5 minutes, then loosen sides and bottoms. Allow to fully cool in pan, then fill as desired.
