Chocolate tapioca pudding

A chocolatey, rich twist on tapioca pudding.
Ingredients
- 1/4 cup small tapioca pearls
- 1/2 cup water
- 1 1/2 cup milk
- 1/8 tsp. salt
- 1/4 cup + 1 Tbsp. granulated sugar
- 1 1/3 Tbsp. cocoa powder
- 2 Tbsp. chocolate chips
- 1 egg
- 1 tsp. amaretto
Instructions
- Place water and tapioca pearls in a pot. Set aside to soak for 30 minutes.
- Add the milk and salt, and turn the heat to medium-high (6). Stir often until simmering.
- Reduce heat to low (2) and whisk in sugar and cocoa powder. Stir often until tapioca pearls have plumped and thickened, ~4 minutes.
- In a separate bowl, beat egg. Slowly add 1/2 cup of hot mixture to the egg, whisking constantly until smooth. Pour egg mixture into pot and whisk until smooth. Stir in amaretto.
- Continue to cook until pudding coats back of a spoon, ~5 more minutes, stirring often.
