A chocolatey, rich twist on tapioca pudding.

Ingredients

  • 1/4 cup small tapioca pearls
  • 1/2 cup water
  • 1 1/2 cup milk
  • 1/8 tsp. salt
  • 1/4 cup + 1 Tbsp. granulated sugar
  • 1 1/3 Tbsp. cocoa powder
  • 2 Tbsp. chocolate chips
  • 1 egg
  • 1 tsp. amaretto

Instructions

  1. Place water and tapioca pearls in a pot. Set aside to soak for 30 minutes.
  2. Add the milk and salt, and turn the heat to medium-high (6). Stir often until simmering.
  3. Reduce heat to low (2) and whisk in sugar and cocoa powder. Stir often until tapioca pearls have plumped and thickened, ~4 minutes.
  4. In a separate bowl, beat egg. Slowly add 1/2 cup of hot mixture to the egg, whisking constantly until smooth. Pour egg mixture into pot and whisk until smooth. Stir in amaretto.
  5. Continue to cook until pudding coats back of a spoon, ~5 more minutes, stirring often.
