A deconstructed version of banana pudding that is full of creamy banana flavor.

Ingredients

  • 1 1/2 cups (~50) mini vanilla wafer cookies

Pudding

  • 1 cup milk
  • 2 Tbsp. sugar
  • 1 Tbsp. cornstarch
  • 1 egg yolk
  • 1 tsp. vanilla
  • Pinch of salt

Batter-wet ingredients

  • 1 1/2 (1/2 cup/170g) medium bananas
  • 3 1/2 Tbsp. (47.6g) oil
  • 1/2 cup (100g) brown sugar
  • 2 1/2 Tbsp. (35g) white sugar
  • 1 egg yolk
  • 1 tsp. vanilla

Batter-dry ingredients

  • 1 cup (125g) all-purpose flour
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt

Instructions

Pudding

  1. Whisk pudding ingredients together in a pot. Heat over medium-low (3), stirring constantly until thick. Set aside to cool.

Batter

  1. Mash bananas. Stir in oil, sugars, egg yolk, and vanilla until fully combined.
  2. Fold in flour, baking soda, and salt until just combined and no dry patches of flour remain.

Assembly

  1. Evenly spread half of the batter into a greased 8” x 8” baking dish. Press enough vanilla wafer cookies on top of the batter to form an even layer. 
  2. Spread pudding on top of cookies, then dollop remaining batter on top. Swirl batter into pudding, then press more vanilla wafers on top.
  3. Bake at 350°F for 30 minutes or until batter is set. Allow to cool to room temperature, then sprinkle with powdered sugar before serving.
