Banana pudding bars

A deconstructed version of banana pudding that is full of creamy banana flavor.
Ingredients
- 1 1/2 cups (~50) mini vanilla wafer cookies
Pudding
- 1 cup milk
- 2 Tbsp. sugar
- 1 Tbsp. cornstarch
- 1 egg yolk
- 1 tsp. vanilla
- Pinch of salt
Batter-wet ingredients
- 1 1/2 (1/2 cup/170g) medium bananas
- 3 1/2 Tbsp. (47.6g) oil
- 1/2 cup (100g) brown sugar
- 2 1/2 Tbsp. (35g) white sugar
- 1 egg yolk
- 1 tsp. vanilla
Batter-dry ingredients
- 1 cup (125g) all-purpose flour
- 1/4 tsp. baking soda
- 1/4 tsp. salt
Instructions
Pudding
- Whisk pudding ingredients together in a pot. Heat over medium-low (3), stirring constantly until thick. Set aside to cool.
Batter
- Mash bananas. Stir in oil, sugars, egg yolk, and vanilla until fully combined.
- Fold in flour, baking soda, and salt until just combined and no dry patches of flour remain.
Assembly
- Evenly spread half of the batter into a greased 8” x 8” baking dish. Press enough vanilla wafer cookies on top of the batter to form an even layer.
- Spread pudding on top of cookies, then dollop remaining batter on top. Swirl batter into pudding, then press more vanilla wafers on top.
- Bake at 350°F for 30 minutes or until batter is set. Allow to cool to room temperature, then sprinkle with powdered sugar before serving.
