These cookies are basically oil shortbread with brown sugar subbed for powdered sugar and added spices, honey, and baking soda.

A deliciously spiced, dairy-free version of a classic airplane snack.
Ingredients
- 3/4 cups (93.8g) all-purpose flour
- 1/4 cup (48g) brown sugar
- 1/2 tsp. cinnamon
- 1/4 tsp. ginger
- 1/8 tsp. allspice
- 1/8 tsp. ground cloves
- 1/4 tsp. baking soda
- 1/8 tsp. kosher salt
- 3 1/2 Tbsp. (46.8g) oil
- 1/2 tsp. honey
- 1/2 tsp. pure vanilla extract
Instructions
- Whisk together flour, brown sugar, spices, baking soda, and salt until smooth.
- Add in oil, honey, and vanilla and stir until combined.
- Pat dough flat on a silicone mat into a 5” square, ~1/4” thick. Dock all over with a fork.
- Bake at 325°F for 16-17 minutes or until edges are lightly golden.
- Remove from oven, cut into 1” strips, then cut those in thirds. Allow to cool unmoved on baking sheet for 30 minutes or until no longer warm.
