Mini donut muffins

I’m not sure how “donut-y” these actually are, they didn’t scream donut at me when I first tried them. They are pretty tasty for what they were, although there is probably room to improve. I just liked them because they were a quick and simple little snack.

Mini donut muffins

Yield: 12 mini muffins
Prep Time: 5 minutes
Cook Time: 13 minutes
Total Time: 18 minutes

A quick and simple snack great for any time of day.

Ingredients

  • 3 Tbsp. (37.5g) white sugar
  • 1 1/2 Tbsp. (20.4g) oil
  • 1/2 (25g) egg
  • 3 1/2 Tbsp. (52ml) buttermilk
  • 1/2 tsp. vanilla
  • 1/2 cup (72.5g) all-purpose flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. ground nutmeg
  • 1/8 tsp. salt

Instructions

  1. Mix wet and dry ingredients separately. Fold dry into wet.
  2. Pour batter into 12 greased mini muffin tins.
  3. Bake at 375°F for 13 minutes. Remove from oven and allow to cool for 5-10 minutes.
  4. Remove muffins from tins, then roll in cinnamon sugar.
