I’m not sure how “donut-y” these actually are, they didn’t scream donut at me when I first tried them. They are pretty tasty for what they were, although there is probably room to improve. I just liked them because they were a quick and simple little snack.
Mini donut muffins

A quick and simple snack great for any time of day.
Ingredients
- 3 Tbsp. (37.5g) white sugar
- 1 1/2 Tbsp. (20.4g) oil
- 1/2 (25g) egg
- 3 1/2 Tbsp. (52ml) buttermilk
- 1/2 tsp. vanilla
- 1/2 cup (72.5g) all-purpose flour
- 1/2 tsp. baking powder
- 1/4 tsp. ground nutmeg
- 1/8 tsp. salt
Instructions
- Mix wet and dry ingredients separately. Fold dry into wet.
- Pour batter into 12 greased mini muffin tins.
- Bake at 375°F for 13 minutes. Remove from oven and allow to cool for 5-10 minutes.
- Remove muffins from tins, then roll in cinnamon sugar.
