A homemade version of a mall classic.
Ingredients
Chicken
- 1 1/2 lbs. boneless skinless chicken thighs
- 1 Tbsp. soy sauce
Sauce
- 1/4 cup bourbon
- 1/4 cup soy sauce and/or coconut aminos
- 3 Tbsp. rice wine vinegar
- 2 Tbsp. water
- 1 tsp. sesame oil
- 1 Tbsp. tomato paste or ketchup
- 3 cloves of garlic, minced
- 1” ginger, peeled and grated
- 1/4 tsp. garlic powder
- 1 Tbsp. brown sugar, or as needed
Instructions
- Add soy sauce and chicken thighs to a bowl. Stir until fully coated.
- Cook chicken thighs over medium-high (6) heat until browned on both sides and fully cooked through. Remove from heat and allow to rest for 5 minutes, then chop into bite-sized pieces.
- In the meantime, add all sauce ingredients to a pot over medium (4) heat. Whisk until smooth. Simmer sauce for 5-10 minutes until somewhat reduced, then add chicken pieces.
- Cover the pot and simmer for 7-10 more minutes until sauce is thick and dark.
