Raspberry cake filling

A fresh, tasty jam filling for a birthday cake.
Ingredients
- 3 pints raspberries
- 1 1/2 tsp. lemon juice
- 1 1/2 Tbsp. sugar
- 1 Tbsp. cornstarch
- 3/4 tsp. vanilla
- Water, as needed
Instructions
- Add rinsed raspberries, lemon juice, and sugar to a pot. Cook over medium-low (4) until thick. Smash with a fork and turn down the heat, as needed.
- Remove from heat. Press through a strainer to remove seeds. Add back to pot and stir in vanilla and cornstarch slurry.
- Simmer until thick.
