Black pepper chicken

A great homemade version of a takeout classic.

Ingredients

  • 2 Tbsp. oil
  • 1 onion
  • 1 green bell pepper
  • 1” ginger
  • 3 cloves of garlic

Chicken

  • 1-1.5 lbs chicken thighs
  • 2 Tbsp. cornstarch
  • 1/4 tsp. white pepper
  • 1/8 tsp. salt

Sauce

  • 1/4 cup soy sauce
  • 1/4 cup water
  • 1 Tbsp. rice wine vinegar
  • 1 tsp. sesame oil
  • 2 tsp. brown sugar
  • 3/4 tsp. black pepper
  • 1 tsp. cornstarch

Instructions

  1. Cut the chicken into bite size pieces. Mix with remaining chicken ingredients and set aside.
  2. Cut bell pepper and onion into 1” squares, mince garlic, and grate ginger. Set aside.
  3. Heat 1 Tbsp. of oil in a skillet over medium (5-6). Cook chicken pieces until fully cooked and golden. Transfer to a bowl and set aside. 
  4. Add remaining 1 Tbsp. of oil to skillet. Add onion and green bell pepper. Sauté until slightly tender but still crisp, ~5-7 minutes. 
  5. Add ginger and garlic and cook for another minute.
  6. While chicken and vegetables are cooking, add sauce ingredients to a pot and stir. Heat over medium (4) until bubbling and starting to thicken, ~4 minutes.
  7. Add cooked chicken and vegetables to sauce and stir well. Heat until warmed through.
