Black pepper chicken

A great homemade version of a takeout classic.
Ingredients
- 2 Tbsp. oil
- 1 onion
- 1 green bell pepper
- 1” ginger
- 3 cloves of garlic
Chicken
- 1-1.5 lbs chicken thighs
- 2 Tbsp. cornstarch
- 1/4 tsp. white pepper
- 1/8 tsp. salt
Sauce
- 1/4 cup soy sauce
- 1/4 cup water
- 1 Tbsp. rice wine vinegar
- 1 tsp. sesame oil
- 2 tsp. brown sugar
- 3/4 tsp. black pepper
- 1 tsp. cornstarch
Instructions
- Cut the chicken into bite size pieces. Mix with remaining chicken ingredients and set aside.
- Cut bell pepper and onion into 1” squares, mince garlic, and grate ginger. Set aside.
- Heat 1 Tbsp. of oil in a skillet over medium (5-6). Cook chicken pieces until fully cooked and golden. Transfer to a bowl and set aside.
- Add remaining 1 Tbsp. of oil to skillet. Add onion and green bell pepper. Sauté until slightly tender but still crisp, ~5-7 minutes.
- Add ginger and garlic and cook for another minute.
- While chicken and vegetables are cooking, add sauce ingredients to a pot and stir. Heat over medium (4) until bubbling and starting to thicken, ~4 minutes.
- Add cooked chicken and vegetables to sauce and stir well. Heat until warmed through.
