A filling fried snack that is beyond words.
Ingredients
- 1 1/2 cups (187.7g) all purpose flour
- 1/4 cup + 1 Tbsp. (62g) sugar
- 1 tsp. yeast
- 3/4 tsp. nutmeg
- 1/4 tsp. salt
- 3/4 cup + 1 Tbsp. (192ml) water
- 2 cups peanut oil, for frying
Instructions
- In a large mixing bowl, combine flour, sugar, yeast, nutmeg, and salt. Add lukewarm water until a slightly thick batter forms.
- Cover and set aside. Allow to rise for 1 hour or until about doubled in size and little bubbles have formed. Refrigerate once risen if making later. (If dough has been refrigerated, let sit at room temperature for 30 minutes before frying).
- Add oil to a medium heavy bottom pot. Heat over medium-high (7) until hot. (Oil is hot when batter is dropped in and doesn’t sink).
- Gently stir batter to deflate the bubbles.
- Drop batter by the tablespoon into the oil. In batches, fry on both sides until golden brown, ~2-3 minutes per side.
Notes
A cookie scoop is very handy for dropping the batter into the oil. Coat the cookie scoop in the hot oil before scooping the batter to prevent sticking.
The puff puff may turn on their own when frying so there is no need to turn them prematurely.
