Simple African tomato stew

A perfect stew for a variety of African dishes.
Ingredients
- 2-3 Tbsp. oil
- 1/2 onion
- 2 cloves garlic
- 1 can diced tomatoes or 3-4 medium tomatoes, diced
- 1 Tbsp. tomato paste
- 1/4” ginger or 1/8 tsp. ginger powder
- 1 habanero
- 1/8 tsp. baking soda
- Salt and pepper, to taste
Instructions
- Dice onion, slice garlic, and grate ginger. Add enough oil to cover the bottom of the pot. Turn heat to medium (4-5).
- Once hot, sauté onion and garlic until starting to brown.
- Add in can of tomato/diced tomatoes, tomato paste, ginger, habanero, and baking soda. Adjust salt and pepper, to taste.
- Allow to simmer for 10-15 minutes.
