Beef jerky (ground beef)

The best homemade beef jerky.

Ingredients

  • 2 lbs. 90% lean ground beef
  • 2 Tbsp. brown sugar
  • 2 Tbsp. tamari
  • 2 Tbsp. Worcester sauce
  • 1 3/4 tsp. salt
  • 2 tsp. garlic powder
  • 2 tsp. onion powder
  • 2 tsp. pepper
  • 1/2 tsp. smoked paprika
  • 1 tsp. liquid smoke
  • 1/8 tsp. cumin

Instructions

  1. Mix all ingredients. Squeeze into rounds on dehydrator.
  2. Dehydrate at 145°F for 8 hours total.

Notes

After the first hour, cut into desired length sticks, dab both sides, flip, and rotate trays.

Repeat dabbing once or twice, as needed.

Beef jerky (cut of beef)

Prep Time: 15 minutes
Cook Time: 8 hours
Additional Time: 30 minutes
Total Time: 8 hours 45 minutes

A protein-packed snack for on the go.

Ingredients

  • 2 lbs. top round or bottom round beef
  • 1/3 c. tamari
  • 1/3 c. Worcester sauce
  • 1/3 c. liquid smoke
  • 1/2 tsp. adobo chipotle pepper
  • 2/3 Tbsp. salt
  • 3/4 tsp. pepper
  • 1 tsp. garlic powder

Instructions

  1. Trim all fat off beef. Cut against the grain into 1/4” slices. Mix all ingredients in a bag. Marinate for 8 hours or overnight.
  2. Dehydrate at 145°F for ~8 hours total. After the first hour, dab both sides, flip, and rotate trays. Repeat again once or twice during dehydration.

Beef jerky (oven)

Prep Time: 8 minutes
Cook Time: 3 hours
Total Time: 3 hours 8 minutes

An easy way to make beef jerky with no special equipment required.

Ingredients

  • 1/2 lb. ground beef
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. soy sauce
  • 3/8 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. pepper
  • 1/4 tsp. ginger powder
  • Pinch of curry powder
  • Pinch of coriander

Instructions

  1. Mix all ingredients until well combined.
  2. Spread on a silicone mat on a baking sheet until between 1/8” and 1/4”. Score into 1” strips that are ~4” long.
  3. Dehydrate in oven at 170°F for 3-4 hours. Pat dry every 30-60 minutes and flip after 1 1/2 hours.
